Chicken Curry Soup

Curry Chicken Soup

INGREDIENTS

– 1 box of organic chicken broth

– 1 cup of rice

– 2 cups of frozen mixed vegetables

– 1 teaspoon of garlic powder

– 1 teaspoon of curry powder

– 1 teaspoon of pepper

– 1/4 cup of lemon juice

– 2 boneless, skinless chicken breasts

INSTRUCTIONS

1. Preheat the oven to 420 degrees Fahrenheit.

2. Place the boneless, skinless chicken breasts on a baking sheet lined with foil and drizzle with olive oil. Bake for 37 minutes or until cooked through.

3. Cook the rice according to the instructions on the box (using 1 cup of uncooked rice).

4. Chop the cooked chicken into small pieces.

5. In a large pot, bring the chicken broth to a boil.

6. Add the frozen mixed vegetables, garlic powder, curry powder, pepper, and lemon juice to the boiling broth. Stir well.

7. Add the chopped chicken and cooked rice to the pot. Stir to combine all the ingredients.

8. Serve hot. This recipe serves 4. Enjoy!
