Summer Dish – Fresh Chopped Salad


2 English cucumbers, chopped
2 zucchini
1/4 cup of chopped white onion
1/2 cup of fresh minced parsley
3 tsp of olive oil
3 tsp of lemon juice
1/4 cup light balsamic vinegar
1/4 cup feta cheese

Serve one cup.   Suggestion – Use a mandolin to cut the cucumbers and zucchini then chop and mix in.
