Risotto with Mushrooms

RisottoWithMushrooms1 cup brown rice, cooked
1/2 cup cottage cheese
1/2 cup Greek yogurt
Garlic powder
Sliced mushrooms
Dried onions

Blend cottage cheese, yogurt, garlic powder, and dried onions until smooth — like a liquid.
Mix with cooked rice and mushrooms.
Pour into 8″ x 8″ baking pan.
Bake at 325 degrees for 30 minutes (or until toothpick comes out clean).

Enjoy four servings of a warm, creamy dish!
