Greek-style Tuna Salad

2 red peppers
1 can chickpeas
1 cup grape tomatoes
4 Tbsp lemon juice
2 Tbsp mint
1/4 cup chopped onion
1/2 cup feta cheese
And black olives — if you like!
1 5-ounce can tuna (drained)

Mix veggies and seasonings in bowl — and then add tuna.
Serve with sliced cucumbers and/or corn tortillas.
