Gazpacho Summer Soup

A recipe from James A. Beard and Carl Jerome with Christina’s personal touch…

1/2 sweet white onion peeled and chopped
1/2 medium cucumber peeled and chopped
1 green pepper chopped
1 yellow pepper chopped
6 vine tomatoes chopped
5 garlic cloves
1 cup tomato juice low sodium
1/2 cup olive oil
3/4 teaspoon chili powder

Mix all ingredients together in a bowl and chill.
Serve cold — and enjoy a last taste of summer!
