Eggs and Salsa

1 – can black beans (drained)reduced fat
1/4 – 1/2 cup salsa
8-10 egg whites
Fat Free cheese (optional)

Drain black beans and then mix with desired amount of salsa (add cumin if desired). Spread black bean mixture in bottom of round 9″ pie plate. Sprinkle cheese over black beans, if desired. Beat egg whites (with a fork or whisk) then pour over top of black beans. Cook in 350 degree oven until eggs set up (usually about 30 minutes or so).

(I usually make this on Sundays and then eat at room temperature or reheat for breakfast – usually lasts me until Wednesday).
