Breakfast Pizza – one serving

It is Saturday morning, no rushing off to take the kids to school and no rushing to work. You have a little time before starting your day. Sit down and enjoy a simple healthy and satisfying breakfast pizza.

4 egg whites
1 slice of fat free cheese, torn into pieces
1/2 chopped fresh Roma tomato (save the other half for a Sunday morning pizza)
A dash of Italian seasoning
One low carb pita

Spray a microwave safe bowl with cooking spray. Pour in egg whites and cook in microwave until just a bit under done. Microwaves vary, mine is fairly powerful and it takes about a minute and a half. Place pita in a plate that can work in your toaster oven or microwave. Sprinkle with a dash of Italian seasoning and your chopped tomatoes and cheese. Toast in your toaster oven or warm in your microwave until cheese melts.

Add a few chopped onions or mushrooms for a little variety and no guilt!
