Baked White Fish with Gingered Cucumber Salsa

4 whitish fillets, your choice

1 tablespoon of white wine vinegar
1 tablespoon honey
2 teaspoons or to taste, grated fresh gingerroot
dash of pepper
dash of salt
dash of crushed red pepper – optional

1 cucumber, cut in half and thinly sliced
1 red pepper diced (you can use green or yellow, as well)
3 -4 Green onions, sliced thinly
Cilantro to taste – optional

Preheat oven to 400 degrees
Bake fish in baking dish sprayed with cooking spray for 10 to 15 minutes or until flaky.

Meanwhile, mix dressing ingredients in medium bowl, toss in veggies to coat.

Serve over warm fish.
