5 egg whites
1/4 cup chopped spinach
1/4 cup pre-cooked sweet potato
Whip egg whites and place in a small pan.
Cover and cook for 2 minutes.
Put spinach and sweet potato patties on top of eggs.
Flip, cover, and cook a little longer.
And, if you’d like, add a little hot sauce or ketchup to spice things up…
